Healthy Watermelon and Tomato Salad
Watermelon and tomatoes may seem an unlikely pair, but they team up to make a winning combination in this eye-catching salad.
Enjoy this watermelon and tomato salad at room temperature, which apart from bringing out the flavors, is supposed to allow us to enjoy the maximum health benefits from the watermelon and tomato that is the essence of summer.
Ingredients
- 5 cups (3/4-inch) seeded watermelon cubes
- 1 1/2 pounds ripe tomatoes, cut into 3/4-inch cubes
- 3 teaspoons sugar
- 1/2 teaspoon salt
- 1 small red onion, quartered and thinly sliced
- 1/2 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- Cracked black pepper to taste
How to Make It
In a large bowl, combine the watermelon, tomatoes and onion. sprinkle with sugar and salt, tossing to coat. Let stand 15 minutes.
Stir in vinegar and oil. Cover and chill 2 hours. Sprinkle with cracked black pepper to taste.Serve chilled.
